Crab Fettuccini with Alfredo Sauce 2 pkg. fresh fettuccini (or one recipe fresh pasta cut into fettucini noodles) 2 egg yolks, beaten 2 c. heavy cream 2 sticks butter, melted 3-5 cloves minced garlic, optional 2 tbsp. parsley 2 tsp. oregano 2 c. Parmesan cheese 2 pkg. Costco surimi, thawed Start noodle water in pot. Remove butter, cream, eggs, garlic, crab from refrigerator, let them start coming to room temperature. Start saucepan to heating. Peel and mince the garlic. Melt the butter on low heat and add the garlic. Separate the eggs, put away the whites for future use, beat the yolks, and add to the cream, then pour into the pan. Stir the mixture frequently as it heats on low/medium heat. When mixture is hot, add spices and cheese, stir to dissolve cheese and frequently thereafter. Do not let the mixture stick. The mixture should come to a simmer at about the same time the noodle water starts boiling. Add the crab meat last, stir in, leave only just time to warm the meat else the surimi chunks come unglued. Cook the noodles about 4 minutes, drain, put in a large bowl, and immediately add the sauce and mix well. Let sit a few minutes before serving.
