It's from http://animalvegetablemiracle.com SWEET POTATO OR SQUASH QUESADILLAS Makes 4 quesadillas 1 large sweet potato or half a small winter squash, cooked and mashed (any extra mashed squash freezes beautifully) 1 onion 1 clove garlic (optional) 1 tsp oregano 1 tsp basil 1/2 tsp cumin chile powder to taste (optional) olive oil for saute 4 large flour tortillas 4 oz. cheese, sliced or grated 4 leaves washed Swiss Chard (or other quick-cooking greens), loosely chopped Preheat oven to 400 (or use toaster oven or griddle) - Chop and saute garlic and onion in a large skillet - Add spices to onions - Spread squash mix on half of each tortilla - Top with cheese and greens - Fold tortillas to close - Lightly oil outside of tortilla (optional) - Flip quesadilla and lightly oil other side (optional) - Bake on cookie sheet or griddle until browned and crisp (about 15 min. in oven, quicker on griddle) - Cut into wedges for serving Shortcut: - Omit onion and spices
