Pumpkin Custard Whisk together: 4 eggs 1.5 cups pumpkin 2.5 cups buttermilk 0.5 cup melted unsalted butter Combine, then add to above: 1 cup sugar (original recipe says 1.5, but I reduced it) 1.5 cups flour 1.5 tsp. each baking powder and soda 0.5 tsp. each cinnamon, nutmeg, salt Bake in a shallow 3 qt. buttered casserole (I used a 9x13 pyrex) in a water bath 400 degrees, 35-45 minutes I like it a bit softer, so take it out before the center is completely solid.
